MOM’S BREAD
Ingredients:
1 1/2 packets dry yeast
8 cups whole wheat flour
1 1/2 tsp. salt
1/2 cup butter, plus some to butter bowl, bread pans, and tops of loaves
1/2 cup honey (a little more if you like it very sweet)
2 1/2 cups warm water
1 egg
Yield: 3 loaves
Directions:
- Thoroughly mix yeast, 2 cups of the; flour, and salt.
- Heat butter, honey, and water until very warm, but not painful to the touch (120-130 degrees – no warmer, or the yeast will die).
- Combine ingredients from steps 1 and 2. Beat for 2 minutes at medium speed, scraping the bowl occasionally.
- Add well beaten egg, and beat in.
- Stir in enough flour to make the consistency firm but kneadable. Knead for 10 minutes (no less). Put in buttered bowl and let stand in a warm place, such as in the sunlight or on an unlit, warm stove. (Keep covered with a dish towel or cloth.) Let stand till double in bulk.
- Put into three parts, kneading slightly. Shape into loaves and put into well buttered or oiled bread pans. Let loaves rise till double in bulk. Butter tops.
- Put loaves in a cold oven. Turn heat on to 375 degrees for 15 minutes, then reduce heat to 350 degrees and bake bread for 15-20 minutes more.
- Remove from oven and brush with butter. Turn loaves out on a rack to cool.
A Gift from my mother!
