MOM’S BEEF STEW RECIPE

Ingredients:
2 lbs. cubed beef (cut off fat and gristle)
1/2 cup flour
2 teaspoons salt and pepper, or to taste
1/2 cup butter or vegetable oil
2 cloves garlic – mashed
1 bay leaf – crumbled
1/2 lb. mushrooms (optional)
8 small onions
1/2 lb. carrots – sliced
6 or 8 small potatoes – diced

Yield:
Enough for a family with 2 adults and 5 young children.

Directions:

• Dredge meat in flour mixed with salt and pepper. Brown in large skillet
• When meat is browned, remove to large heavy casserole.
• Brown mushrooms in skillet.
• To casserole add garlic and bay leaf, mushrooms, and 1 cup water. Boil slowly with cover on for about 45 minutes.
• Then add carrots, onions, and potatoes, and about 1 cup more water. Simmer gently for an hour.
